Egg Noodles
This is our take for making egg noodle (fettuccine , spaghetti, bow tie, linguine or even lasagna)

Cook Time 40 minutes minutes
Total Time 1 hour hour 10 minutes minutes

- 4 cups all purpose flour
- 2 cups semolina flour
- 7-8 eggs
- 1/2 cup of olive oil
- Water (as needed)
- 3 tsp of salt
Mix flour and salt in kitchen aid mixer bowl
Crack eggs to center of bowl making a well
Add oil
Mix with mixing hook on speed 1-2 until the dough still is crumbles
Change to dough hook and the add water just to the point where a ball is consistent and the machine begins to work hard.
Knead the dough then by hand till you have a consistent ball. Knead, push and rotate for 5 minutes.
Wrap in cling wrap to keep moist(you may refrigerate for a few hours if you are not ready to make right away)
After 20-30 minutes roll flat and run through pasta attachments
Let noodles air dry. Bag and freeze as needed.
