Egg Noodles

This is our take for making egg noodle (fettuccine , spaghetti, bow tie, linguine or even lasagna)

Ingredients

  • 4 cups all purpose flour
  • 2 cups semolina flour
  • 7-8 eggs
  • 1/2 cup of olive oil
  • Water (as needed)
  • 3 tsp of salt

Instructions

  • Mix flour and salt in kitchen aid mixer bowl
  • Crack eggs to center of bowl making a well
  • Add oil
  • Mix with mixing hook on speed 1-2 until the dough still is crumbles
  • Change to dough hook and the add water just to the point where a ball is consistent and the machine begins to work hard.
  • Knead the dough then by hand till you have a consistent ball. Knead, push and rotate for 5 minutes.
  • Wrap in cling wrap to keep moist(you may refrigerate for a few hours if you are not ready to make right away)
  • After 20-30 minutes roll flat and run through pasta attachments
  • Let noodles air dry. Bag and freeze as needed.
