August in Minnesota means it is time to put up Sweet Corn as it becomes available.

Sasse Farms out of Le Seuer always has a stand by the NAPA store in New Prague. It is fantastic bi-color corn. Dawn picked up agunny sack (generally about 6-7 dozen) on Friday after work. In total it was about 8-dozen ears.

Saturday morning I set up a table in the garage and prepped the garbage cans for the husk. Once I got some tunes going…it was full steam ahead.

After getting each ear husked, then it was time to get roaster out. I cut the corn off the cob and discarded the remainder in the trash can.

We ended up 2 roasters so I had to split the cream and butter between them. The corn was roasted at 225 and stirred frequently. The key is to not allow the cream to curdle.

Once it is hot, transfer it to container of choice to cool. We actually had plenty of room in garage refrigerator as beer supply is low(go figure)!

Later, I transferred the cooled container to the freezer.

Eight dozen ears produced 24 containers of corn. That equates to 2 containers a month. Perfect!
